Two Philippine chicken dishes were named among the 50 best in the world, according to travel guide TasteAtlas on Saturday. Ranking third on the list is inasal na manok, a signature dish from Western Visayas. It earned a rating of 4.4 out of 5 stars. The dish features chicken marinated in a mixture of vinegar, lemongrass, garlic, and ginger. “Inasal na manok is a unique Filipino grilled chicken dish which originated in Western Visayas and became the signature dish of the entire region. It employs various chicken cuts marinated in a mixture of vinegar and numerous spices such as lemongrass, garlic, and ginger,” TasteAtlas described. During grilling, the meat is brushed with annatto-infused oil, giving the chicken its distinctive golden color and a slightly peppery flavor. It is typically served with annatto-flavored garlic rice and spiced vinegar. In 2022, Bacolod City declared the dish an important cultural property. One of the most iconic places to enjoy chicken inasal is Aida’s Manokan, which also has a branch in Makati City recognized as a Michelin-selected restaurant. Meanwhile, another Filipino favorite, adobong manok (chicken adobo), ranked 40th on the list with a rating of 4.1 out of 5 stars. “Adobong manok is a traditional stew originating from the Philippines. This type of Filipino adobo is made with a combination of chicken, garlic, onions, bay leaves, peppercorns, oil, brown sugar, soy sauce, and white vinegar,” TasteAtlas said. The chicken is first marinated in the mixture (excluding oil), then browned in oil over medium heat. The remaining marinade is combined with water and added back to the chicken, which is simmered until fully cooked. The dish is typically served with white rice. Topping the list is Korean fried chicken or chikin, which also received a rating of 4.4 out of 5 stars. It is widely available in Korean restaurants across the Philippines.
