He explained that he wants to grow his business by offering a wider range of cuts. "It is much, much cheaper than beef. Yes, of course. I am now going to start bringing in minced meat and some other guanaco cuts as well. But with the added challenge that you also have to try to introduce it to the customer," Ovidio said. "Mainly the price, compared to beef. And secondly, because the truth is it has good flavour; it does not differ much, depending on the cut, and it does not differ much from beef," said a customer, who added that guanaco meat is a good option for large families. Despite growing interest, the legal consumption of this type of meat remains limited. Authorities in provinces such as Chubut remind us that the sale of this product is not authorised, which restricts the development of the market. Specialists argue that, due to its high nutritional value and importance as a resource from Patagonian wildlife, the commercialisation of this product should be expanded throughout the country and not limited to Santa Cruz.
