Morioka is a city of noodle culture, home to Morioka reimen, wanko soba and jaja men, which are known as its “three great noodles.” But ramen can hold its own too. Kimchi natto ramen, the signature dish of local ramen shop chain Yanagiya, has been a favorite in the community for about 40 years. I visited Morioka to try this ramen, which in the 1980s was ahead of its time for the way it brought together two popular fermented foods: kimchi and natto.
